Expert butcher Tom Mylan teaches everyone how to properly butcher a pig. I would love… LOVE… to learn proper butchery. Besides the whole self sufficiency angle and the whole wasting as little as possible angle, I truly believe that if you’re going to eat an animal and take on all the irresponsibility that comes with it, the LEAST you can do is be truly willing to go through every step of killing, cleaning and cutting it.
One day I’ll get there and really feel worth the animals I eat.
